Producer/Brewery ( Yamanashi Prefecture / Sasaichi Sake Brewery (Dan) )
This brewery, located in Otsuki City, Yamanashi Prefecture, was founded in 1661. In Sasago, where the brewery is located, underground water originating from sacred Mount Fuji flows, and this water is known as "Gozen-mizu," the water that Emperor Meiji once chose to carry with him when he traveled from Tokyo to Kyoto. This water is used in the brewing process.
The brewery completely abolished mass-production equipment at the end of the 2013 brewing year, and is returning to hand-made koji and yeast starter processes. In conjunction with this, the brewery has converted to equipment for producing high-quality sake, installing the latest rice washing machines, a ginjo steamer capable of producing dry steam, and two sake presses, one Sase-style and one Nagata-style, in an effort to significantly improve the quality of its sake. The brewery uses a generous amount of rice suitable for sake brewing, such as Yamadanishiki and Yumesansui, grown locally under contract, and brews with Gozensui water, resulting in a sake with just the right amount of fruity aroma and a clean aftertaste.
