Hon mirin has been enjoyed by people with a sweet tooth as a nightcap in Mino since the Edo period. This amber-colored mirin is made only from domestically produced glutinous rice, rice koji, and rice shochu, and is brewed using traditional methods for 90 days and aged for around three years, resulting in a rich, umami-filled sake with a deep sweetness and complex umami flavor.
This subtle, refined sweetness not only brings out the flavor of the ingredients in your cooking, but is also recommended for adding flavor to sweets such as pancakes and castella.
Adding an appropriate amount when cooking rice will give it a glossy finish and enhance its sweetness.
