"Imanishi" is a limited distribution brand by Imanishi Sake Brewery, whose main brand is "Mimurosugi." Brewed to bring out the best in the unique characteristics of "Asahi rice," a rare indigenous rice variety that is the ancestor of Koshihikari and Sasanishiki, it offers a light and elegant ginjo aroma and a balanced taste of moderate rice sweetness.

Founded in 1660 (Manji 3), this brewery is located in Sakurai City, Nara Prefecture. It is the only sake brewery still standing in Miwa, the birthplace of sake brewing and known as "the place where the god of sake resides." Taking into account this historical and geographical background, the brewery aims to create sake that expresses the history and culture of Miwa and the climate (water and rice) that is produced there.
In sake brewing, we primarily use Yamada Nishiki and Tsuyubakaze, the only rice variety in Nara Prefecture suitable for sake brewing, as raw materials, and we prioritize quality by using underground water from Mt. Miwa that springs from a well within the brewery.
