Soybeans that are left whole are called "whole soybeans," while soybeans that have had the oil removed for use as an ingredient in soy sauce are called "defatted soybeans." Whole soybeans contain fats and oils that float to the top of the namaage soy sauce, which is the soy sauce seasoning that is extracted, so in the past the oil was removed, but for efficiency reasons it has become mainstream to use "defatted soybeans," which have had the oil removed from whole soybeans beforehand and are processed to be used as an ingredient in soy sauce.
In this context, soy sauce made from whole soybeans is characterized by its "mellowness" and "deep umami" flavor, as the oil and fat components of the soybeans are broken down during brewing. In particular, whole soybeans grown in Japan without the use of pesticides or chemical fertilizers are rare. This soy sauce, made using these rare whole soybeans grown without the use of pesticides or chemical fertilizers, is Matsuai Foods' most carefully crafted product.
