Marui Gomei, the brewery that brews "Raku no Yo," is a small brewery with only 40 koku of rice. While sake is generally brewed in three stages, consisting of "Hatsu-zoe," "Naka-zoe," and "Tome-zoe," this brewery uses a four-stage fermentation process with hot fermentation. However, a few years ago, they put in too much rice in the fourth stage, resulting in an extremely sweet sake with a sake meter reading of over -20. However, this balances well with the high acidity, resulting in a unique and delicious flavor. Since then, they have been brewing this sake every year by intentionally putting in too much rice! (laughs)
The taste is rich and full of umami, and can be enjoyed on the rocks without becoming dull.
