"59 Takachiyo" is a series brewed with Association Yeast 1801 and polished to 59% using flat polishing, highlighting the individuality of the rice.
This product is made using "Mori no Kuma-san," a variety of rice grown in Kumamoto Prefecture that was created by combining Hinohikari and Koshihikari. It has a gorgeous citrus aroma, a crisp, clean taste, and is easy to drink.

This brewery was founded in 1868 and is located in Minamiuonuma City, Niigata Prefecture.
The underground water from the Makihata mountain range, pumped up from a well dug on the premises, is of high quality and soft, making it ideal for brewing sake with a smooth mouthfeel.In addition, the brewery uses "ippon-jime" rice, a rare variety that is increasingly being used by fewer and fewer breweries due to the difficulty of polishing the rice, managing the moisture content, and making koji.The brewers themselves are involved in the entire process, from seed production to management, cultivation, and polishing, and are extremely particular about the quality of the rice.
