This Junmai Daiginjo sake is made with Okuizumo-grown "Kairyo Omachi" rice, polished to 50%, and brewed with No. 7 yeast in the San'in Ginjo style of Izumo brewers. It's pasteurized once. It's the sake that best illustrates the San'in Ginjo brewing process. Its clear aroma, hints of banana and citrus, and pure ginjo aromas are present on the palate, creating a refined flavor reminiscent of sacred sake.
