Akazake is a mellow, sweet sake that is a specialty of Kumamoto and carries on the ancient Japanese tradition of "Akumochizake."
Akazake, which turns red as it ages, is widely enjoyed in the Kumamoto region as a New Year's sake or ceremonial sake, and is also a popular seasoning in place of mirin.
Even today, this red sake is soaked in toso powder and served as Kumamoto toso.
It has long been common in Kumamoto to use red sake in cooking, but now the demand for it as a cooking sake used in kitchens across the country is growing year by year, and it is loved by many chefs as a seasoning sake with characteristics that other cooking sakes and mirin do not have.
