This brewery, located in Matsue City, Shimane Prefecture, was founded in 1896. It uses home-polished rice, primarily varieties of Shimane Prefecture rice suitable for sake brewing, such as Yamada Nishiki, Kairyo Omachi, Gohyakumangoku, Sakanishiki, and Kaminomai, as well as water that springs from a steep slope at the foot of a mountain on the outskirts of Matsue City, and is brewed by a long-established Izumo master brewer.
