Dr. Bill Ramsden is respected in the single malt industry as an innovative whisky maker. "Forest" is a single malt full of fresh botanical aromas, expressing the sights, scents and sounds of a beautiful forest through whiskey. (Tasting notes) Nose: Sweet malt, biscuity, creamy yet sharp aromas framed by botanicals like juniper and coriander. Herbal top notes elicit a splash of water, evoking juniper, coriander, marshland, pine needles, nettles, and mint. The nose evokes glacéd cherries, sweet walnuts, and wood toasting. Taste: A peppery, almost effervescent sensation hits you, followed by a wave of flavors: peppermint, menthol, eucalyptus, pine, tree sap, angelica, bitter orange, and a subtle hint of fragrant aroma. The sensation continues with bittersweet oak with tannins, aniseed, and a touch of oily vanilla. Finish: A long, lingering finish with notes of tart citrus fruits like orange and lemon, and oak.
