Ikawa Distillery is a new distillery that opened in November 2020 at an altitude of 1,200m in the Ikawa Forest, deep in the mountains of Shizuoka Prefecture, where spring water from the Southern Alps is found and Mizunara oak trees grow naturally. Just like the harmonious ecosystem of the Southern Alps, where various creatures live, whisky also creates a state of harmony in aroma and flavor through the malt production and blending of various malts by the brewer. This "harmony" is what the distillery aims for in its 12-year-old whisky, and the "Drawing Series" expresses the process leading up to its completion. A new model will be released every year until the regular model is completed, and more than 20 different motifs are planned to be added. The first release in 2024 was the non-peated "Flora" (flora = plant motif), and this second release is its counterpart "Fauna" (fauna = animal motif), a peated single malt whisky. This medium-peated whisky is based on Ikawa Distillery's key malt, a non-peated bourbon barrel whisky, and is blended with whiskies made from malts with phenol levels of 50ppm and 30ppm. The label features an animal of the Southern Alps, including a ptarmigan, a special natural monument (the range of the ptarmigan in the Southern Alps is the southernmost in the world, making it an extremely precious habitat). (Tasting notes) A combination of orange bitterness and peat. The natural sweetness of candy brings the whole thing together. The peaty flavor isn't too strong, allowing the umami and depth of the sake to shine through rather than leaving a burnt taste. The aftertaste is a lingering mix of sweetness and bitterness like bitter chocolate, making it a drink you'll never tire of.
