Domestic Whisky / Shindo Distillery EX Bourbon Single Cask 3-Year Aged for JWS Fukuoka 2025

Shindo Distillery (Shinozaki Co., Ltd.), located in Asakura City, Fukuoka Prefecture, began operations in August 2021, building on 200 years of tradition in sake and other alcoholic beverages. The distillery continues to take on unique challenges, aiming to set the standard for the future through the thorough creation of new-make sakes using proprietary yeast and aging in a variety of barrels.
This single cask whiskey was bottled for "JWS Fukuoka 2025" (Japanese Whisky Stories 2025), a Japanese whiskey event hosted by bartenders from Fukuoka and Saga prefectures. It is aged for three years in bourbon barrels.

(Tasting notes)
Aroma: Sweet with hints of caramel, molasses, and dates. Roasted nuts.
Taste: Unripe grapefruit. Bitterness of 80% cocoa chocolate. Smooth sweetness and sourness of orange.
Finish: Sweetness reminiscent of caramel and toffee, followed by a sour taste. A slight bitterness at the end of the drink, with a long aftertaste.
