Dornoch Distillery, owned by Thompson Brothers, is a new distillery established in the Highlands in 2016. It combines traditional and modern techniques to create new whiskies, and has been highly praised in recent years.
This "Blended Malt SRV5" is a standard release from Thompson Brothers. It is carefully selected from single malts aged for over eight years, then blended and aged in European oak barrels (1200-liter). The "solera system," a method commonly used in sherry production, stabilizes the aging level in the aging warehouse, ensuring consistent quality at all times before bottling. It is non-chill filtered and non-colored.
It's vibrant and fresh, with a rich mouthfeel and a subtle smoky flavor. It's also reasonably priced!
