The Timorous Beastie series, produced by major bottler Douglas Laing, features the striking "field mouse" inspired by the works of Robert Burns, and is a blend of single malts from the Highlands (Blair Atholl, Dalmore, Glengoyne, Glen Garioch, Strathearn, etc.).

This is the third release in the "Cheese Cellar Collection." This Highland blend is finished in white and purple Moscatel* sherry casks. The brilliance of grapes grown in the Spanish sunshine is beautifully balanced with the distinctive character of Scottish Highlands. It pairs perfectly with goat cheese, with its soft texture, subtle acidity, and creamy flavor.
*Moscatel is a fortified wine produced in the Andalusia region of Spain. It uses Muscat Alexandria grapes, one of the grapes used to make sherry, and is extremely sweet, with a high sugar content achieved by late harvesting and sun-drying.

Aroma: Sweet spices rise, then change to the refreshing aroma of dried fruit, caramel, and orange peel. Taste: The creamy flavor of malt and grains fills the mouth, exquisitely layered with the bittersweetness of marmalade and honeysuckle. Finish: A long, sweet aftertaste, gently lingering with nuances of orange blossom, subtle spices, and apricot.
