"Gin no Sato" (parent varieties: Yamadanishiki and Nishikai 222) is a sake rice variety suitable for cultivation in Fukuoka Prefecture that has the same quality as "Yamadanishiki," but is high-yielding, resistant to falling, and easy to cultivate. This "hiyaoroshi" sake is made from junmai ginjo rice that is polished to 60% and then aged in a tank for one summer. The aging process mellows the harshness, develops the flavor, and leaves a smooth texture on the palate.
