This ultra-dry Junmai sake is made with Itoshima Yamadanishiki rice, polished to 70% and brewed using the Yamahai method, with a sake meter reading of +14. It has the complex, full-bodied flavor that is unique to the Yamahai method.

Founded in 1922 (Taisho 11), this brewery is located in Tachiarai-machi, Mii-gun, Fukuoka Prefecture. Its representative brands are "Miino Kotobuki" and "Mita." Ever since its founding as a rice wholesaler, the brewery has consistently focused on "quality," and over 90% of the sake it produces is designated sake, with the majority of it being junmai sake.
In addition to tradition, the brewery is proactive in exploring new possibilities in sake brewing through science, sense, and passion.
