Producer/Brewery ( Akita Prefecture/Akita Brewery (Yuki no Bijin) )

This brewery in Akita City was founded in 1919. After current president Tadahiko Kobayashi took office, the brewery was rebuilt in a corner of an apartment building in 2001, and the brewery has been actively developing its own products, including "Yuki no Bijin." The brewery is equipped with facilities that allow for low-temperature control, and uses water pumped from the foot of Mount Taihei in Akita City for brewing. A small, elite team washes and soaks the rice by hand. All tanks are small, designed for daiginjo sake, and only sake of junmai or higher quality is produced.
