This special junmai sake is brewed using a fast-brewing method that uses natural yeast from the brewery that was separated and preserved from Yamahai mash over a decade ago. It is bottled immediately after being pressed using a balance press in a wooden vat, and has a very fresh taste with a balanced sweetness from the soft rice and gentle acidity.
