「山北（やまきた）」は、高橋酒造店の屋号に因み、蔵元の誇りを表す特別なシリーズ。この商品は、岩手県独自の大吟醸用に開発され、山田錦に匹敵する酒質を生み出す酒造好適米「結の香」を自家栽培の上、50%で精米、高グルコアミラーゼ麹「roots36」を用いて醸した純米大吟醸の火入れバージョンです。

上品かつ華やかで爽やかな香り、上質な甘みと酸がバランスした、贅沢感を感じる余韻を楽しめます。火入れを行ったことにより味に柔らかさが出て、口当たりの優しい極めて高品質の出来栄えと杜氏自信の一本。

Producer/Brewery ( Iwate Prefecture / Takahashi Sake Brewery (Horinoi) )

Founded in 1922, this brewery is relatively new, but its family has a long history of working with rice, having operated a koji maker since the Edo period. Located in Shiwacho, Iwate Prefecture, its flagship brand is "Horinoi." Following the tradition of Nanbu Toji sake brewing, the brewery utilizes underground water from the melting snow of the Ou Mountains and sake rice harvested from its own rice fields.
