"Mikatsuki" is a highly refined sake from the Kame no O series. It is polished to 40% and aged at ice temperature. After bottling, each bottle is pasteurized (binkanhiiri) and then rapidly cooled using ice water, making it a sake that is worthy of being entered into a tasting competition.
It has a melon-like aroma, a smooth texture, and a sweetness like canned peach syrup, balanced with a strong acidity that gives it a refined flavor.
