Koei Kiku, whose corporate philosophy is to "continue to produce exciting new sake that has never been seen before," is releasing three barrel-aged sakes at the same time. This time, they used Madeira, Pedro Ximenez, and Oloroso barrels. They are taking on various challenges, such as sakes brewed specifically to match the characteristics of the barrels, and sakes that are selected and blended from sakes that have been aged for a long time. Each of the three types has very different flavor characteristics, so you can enjoy comparing them.
This product is a sake aged in Pedro Ximenez barrels, a type of sweet sherry. This 2021 harvest sake, specially brewed to be extra sweet using Omachi rice, was aged in these Pedro Ximenez barrels for approximately two years. It combines the flavor of the oak barrels, a rich honey-like texture, a sticky viscosity, a fruity aroma reminiscent of raisins, and acidity. It finishes cleanly, leaving behind a smoky finish from the barrel.

Producer/Brewery ( Saga Prefecture/Koei Kiku Brewery )
This brewery, located in Ogi City, Saga Prefecture, was founded in 1871 (Meiji 4). In 2006, it closed its doors after a long history of 135 years, but under a new management structure led by a director who had worked on famous TV programs, it overcame difficult hurdles such as securing a brewery for production and obtaining a sake production license, and with the addition of Yamamoto, the spirited master brewer of Aichi Prefecture's "Kikutaka," it began selling its sake in December 2019. It quickly became a popular brewery.
