This unfiltered, unpasteurized sake is made using Yamadanishiki rice from Mie Prefecture, which is polished to just 90%. It takes on the traditional kimoto brewing method while taking advantage of the rice's natural characteristics, hence the name Challenge 90.
The sake that comes out of the tank is bottled as is.
