兵庫県産「山田錦」を60%精米し醸した特別純米の、ひと夏越して熟成させたひやおろし（1回火入れ）です。
落ち着いた純米酒らしい穀物の香り、KT901号酵母らしい品の良さと滑らかなタッチ、ボリュームがありながらもキレの良い味わいです。

Producer/Brewery ( 滋賀県／藤本酒造（神開 しんかい） )

江戸明和年間（1760年代）創業の、滋賀県と三重県との県境に位置し、甲賀忍者の里として有名な滋賀県甲賀市にある蔵元。代表銘柄は神開（しんかい）。

当初は「宝一」の名で清酒を造っていたが、あまり酒質が良 くなく、当地の「山村神社」のご神託を奉じて井戸を掘ったところ、鉄分が極端に少なく、ミネラル分を多く含んだ最上の名水が湧き出し、米どころ「近江米」を使用し醸されたお酒が大変美味しくなったことから、商品名を「神開」（神様のお告げにより出来た清酒）へ変更し現在に至ると言い伝えられています。

造りでは滋賀県産米の山田錦・吟吹雪・玉栄・日本晴を中心に使用し、各々のお米の性格を素直に表現した酒造りを目指しています。
