Producer/Brewery ( Akita Prefecture / Saiya Sake Brewery (Yuki no Bosha) )

This brewery, located in Yurihonjo City, Akita Prefecture, was founded in 1902. The brewery is called a "Nobori-gura" and has a unique layout, with a height difference of about 6 meters, starting with the rice polishing place at the top and descending as the process progresses and the sake is transformed into finished sake products. In this environment, sake is brewed using their own cultured yeast and with a focus on polishing the rice.
