「ひだほまれ」と「秋田酒33号」を親に持つ、富山県で開発された酒造好適米「雄山錦」を使用。70%精米し、山廃で仕込み、上槽後、無加圧の状態で自然に垂れてきた発酵ガスを含んだままのお酒だけを、直に瓶詰めしたお酒です。
一般的には三段で仕込むのに対し、この商品は四段で仕込み、日本酒度-17の極甘口ともいえるレベルですが、酸度6.5と高酸度の造りであり、米の旨味や甘みがガツンと来るとともに鮮烈な酸がバランスよくまとめ、意外にすっきりとした余韻でまとまる味わいです。

Since its founding, it has used Yamahai yeast brewing methods for all of its sake, from ginjo sake to regular sake, and has upheld "home-grown Hinohikari rice" and "mizumoto-brewed unrefined sake" as the basis of its sake brewing.
