This Junmai Daiginjo, brewed with a rice polishing ratio of 50%, is pasteurized once (nama-bottled) and aged over the summer to create "Junmai Daiginjo Hiyaoroshi."

The aroma is reminiscent of apples, and along with the umami of rice, a hint of pear spreads, and a slight astringency that appears in the aftertaste tightens the flavor.

Producer/Brewery ( Gunma Prefecture / Ryujin Sake Brewery (Oze Snowmelt) )

This brewery was founded in the Edo period and is located in Tatebayashi City, Gunma Prefecture. Their signature brand is "Oze no Yukidoke." The company name comes from the fact that the brewery was built on top of "Ryujin no Ido," a famous spring water produced by the melting snow of Oze. Using the ultra-soft water that springs from this well, they brew sake that is primarily rich and flavorful, bringing out the natural umami of the rice to the fullest.
