「鶴鳴」（かくめい）は、江戸返りの頂点をなすシリーズ。この「一聲（いっせい）」は、年２回発売されるこのシリーズの中核商品となります。江戸寛文年間に焦点を当て、過去の文献を参考に、栃木県さくら市産「ドメーヌさくら／減農薬 山田錦」100%使用し醸した、生酛純米、無濾過・原酒（火入れ）で、ひと夏低温熟成させ秋に発売される「秋あがり」バージョンです。
今回の仕様から生酛仕込みへ変更し、前回までの造りとは異なります。生酛化により、より繊細で奥行きのある味わいです。

They claim to be a domaine that owns its own rice fields and is involved in everything from rice cultivation to sake brewing, and are committed to unique sake brewing, including the preservation of the ancient rice variety "Kame no O" and a commitment to organic farming.
