「鶴鳴」（かくめい）は、江戸返りの頂点をなすシリーズ。この「醸（かもす）」は、シリーズ内の頂点となる商品で、自社栽培であるドメーヌさくらの有機栽培「亀の尾」と〃減農薬「山田錦」を使用し、仕込み水の代わりにビンテージの酒を使用した生酛仕込みの「貴醸酒」です。
「貴醸酒」は、古くは江戸時代よりも昔に遡り、ヤシオリの酒を祖とする最も歴史と手間暇をかけている酒であり、この商品により新しい高級酒としての価値を提案しています。
