The parent varieties of "Yamada Nishiki," a representative variety of excellent rice suitable for sake brewing, are "Yamadaho (mother)" and "Tankan Wataribune (father)," which is used in this sake.
This brewery has been working hard to revive the area at the foot of Mount Tsukuba since 1989, and has continued to revive the brewing of ginjo sake ever since.
This product is a Junmai Daiginjo made from short-stalk Watabune rice, polished to 30%. It has a fruity and elegant aroma, a rich rice flavor, and a clean, clean finish.
