Shochu is a distilled alcoholic beverage, just like whiskey and gin, and is made by further distilling a brewed alcoholic beverage made by fermenting ingredients. Unlike whiskey and brandy, shochu is made from a variety of ingredients.
Shochu is divided into two categories based on the distillation method: "Shochu Class A" and "Authentic Shochu" (Shochu Class B). "Shochu Class A" is shochu that has been distilled repeatedly to increase the purity of the alcohol, while "Authentic Shochu" (Shochu Class B) is made by first making koji, then adding ingredients such as rice, barley, and sweet potato, and fermenting the resulting mash, then distilling the mash in a pot still. This shochu is characterized by its rich, deep flavor of the ingredients.
