This special Roman is made using the traditional four-stage brewing process of glutinous rice, with "Fukunoka," a rice variety developed in Fukushima Prefecture that is suitable for sake brewing, and "Hime-no-Mochi," the glutinous rice used in the fourth stage, polished to 35% and brewed specifically for the sake tasting competition.
This is a flagship product that embodies the brewery's entire brewing philosophy.
