This sake is made from 80% polished "Aizan" rice grown in the Special A district of Kato City, Hyogo Prefecture. Because "Aizan" rice is naturally low in protein, even when polished to 80%, the amino acid content is very low, resulting in a very clear sake.
The unique Aizan sake has an overwhelming clarity, regardless of its sweetness. It has a light fragrance reminiscent of pale green grapes and a complex flavor that can only be achieved with 80% polished rice. It is a sparkling, clear sake.
This product is the "Manakatori" version of "Kaze no Mori Aizan 807." Manakatori is a sake that is pressed mechanically (using a Yabuta press) without applying pressure, and only the dripping part is extracted. Compared to the regular version, it has a softer mouthfeel and a richer aroma.
