This "Tsuyubakaze 807" is a rare sake rice currently only grown in Nara Prefecture. It is made from "Tsuyubakaze" grown in Mitsue Village by the cooperative "Hotaru no Sato." It is polished to 80% and brewed with No. 7 yeast. The sake is then pressed using our unique "Ikakitori" method, which prevents the evaporation of aromatic components, oxidation, and the destruction of flavor, preserving the flavor of the mash. It is an unfiltered, undiluted sake.
You can enjoy the unique balance of sourness, astringency, umami, and rich sweetness of Tsuyuhafu.
