Akitsuho 657 is a masterpiece from the Wind Forest series. It is a product with very limited stock.

This sake is made using Kaze no Mori's flagship rice, Akitsuho, which is grown under contract in Nara Prefecture. It has a fragrance reminiscent of white grapes and green fruits, a complex flavor that includes sweetness, umami, acidity, and astringency, and a texture that comes from being brewed using ultra-hard water.
Manakadori is a sake made by drastically cutting down the Sekime and Arabashiri, and only extracting the dripping parts without applying pressure. It has a particularly soft mouthfeel and rich aroma, even among sakes brewed in the same tank. It is also fun to compare it with the regular version, "Akitsuho 657."
