All ALPHA series sakes are brewed using "bodaimoto" yeast, which, combined with the acidity unique to lactic acid bacteria, gives the brand a three-dimensional yet light flavor.
This product takes advantage of the characteristics of Akitsuho rice, which can withstand high-level polishing. The rice is polished to 22%, brewed with No. 7 yeast, and then subjected to a unique method called "Ikakitori," which prevents the evaporation of aromatic components, oxidation, and destruction of flavor, preserving the flavor of the mash.
It has a scent reminiscent of unripe white strawberries, a clarity derived from the refreshing acidity (moromi), and a light taste thanks to the ultra-hard water.

Located in Gose City, Nara Prefecture, this brewery was founded in 1719. Nara Prefecture is said to be the birthplace of Japanese sake, and the techniques that form the basis of modern sake brewing techniques were established in Nara at the end of the Muromachi period. With this historical background, Takacho has inherited the techniques and brewing methods established by the great temples of Nara and preserves the traditional dignity of Nara sake, while Kaze no Mori is constantly incorporating modern technology and creating new traditions, brewing sake from both a traditional and innovative perspective.
