The Noto Peninsula earthquake that occurred on New Year's Day, 2024, caused extensive damage to sake breweries. In order to help the affected breweries in Noto, Aburanaga Sake Brewery is supporting their early recovery by using rice that had not been used to make sake due to the disaster, together with the master brewer of Hakuto Sake Brewery, makers of "Oku Noto no Shiragiku."
The following items ① and ② are sold in sets of two, each containing one bottle.
1. Oku Noto no Shiragiku Original Recipe Reproduction Sake x 1 bottle "Oku Noto no Shiragiku Junmai Daiginjo (Single Pasteurization)". While "Kaze no Mori" usually uses ultra-hard water for brewing, this time it was brewed with soft water, adjusted to the same hardness as Wajima's water. "Oku Noto no Shiragiku" is brewed in Nara, the birthplace of Japanese sake.
② Oku-Noto no Shiragiku #Kaze no Mori Collaboration Brewing x 1 bottle Normally brewed only with No. 7 yeast, Kaze no Mori is using Ishikawa Prefecture's signature Kanazawa yeast for the first time. While the original version is brewed with soft water and pasteurization, the collaboration version is brewed with extra-hard water and unpasteurized sake. Both sakes use Yamadanishiki rice that escaped the disaster.

Producer/Brewery ( Nara Prefecture / Aburanaga Sake Brewery (Kaze no Mori, Takanaga) )
Located in Gose City, Nara Prefecture, this brewery was founded in 1719. Nara Prefecture is said to be the birthplace of Japanese sake, and the techniques that form the basis of modern sake brewing techniques were established in Nara at the end of the Muromachi period. With this historical background, Takacho has inherited the techniques and brewing methods established by the great temples of Nara and preserves the traditional dignity of Nara sake, while Kaze no Mori is constantly incorporating modern technology and creating new traditions, brewing sake from both a traditional and innovative perspective.
