This Junmai Daiginjo is made from Hokkaido-grown Ginfu rice, which has been highly praised for its award-winning record at tasting competitions, and is carefully brewed using polished rice that is 40% polished. To bring out the luxurious and elegant qualities of Ginfu, the undiluted sake is aged in ice for nearly a year and a half, and the year of brewing is printed on the label. The price changes depending on the quality evaluation of the sake each year, allowing you to enjoy the difference in quality depending on the vintage.

Producer/Brewery ( Fukui Prefecture/Kokuryu Brewery )

Founded in 1804, this brewery is located in Eiheiji Town, Fukui Prefecture. During the seventh generation, the brewer developed a deep interest in wine, a type of brewed alcoholic beverage, and traveled to France and Germany, exploring through trial and error whether sake could be aged in the same way as wine, while continuing to pursue the brewing of high-quality sake in small quantities. This resulted in the birth of "Kokuryu Daiginjo Ryu," which became the first daiginjo sake to be commercialized in the country.
