This is Kurumazaka's pinnacle sake, a limited edition produced in small quantities. Both the koji rice and the kakemai rice are all Yamadanishiki rice, polished to 50%, and the yeast is a blend of two types: 1801 yeast, which is characterized by its apple aroma, and Kanazawa yeast, which has a banana aroma. The mash is pressed without pressure using a hanging bag, refrigerated in a tobubin (small sake vessel), and only the top layer is skimmed off once the sediment has settled. This Junmai Daiginjo is pasteurized once.
It has a gorgeous yet elegant aroma, a smooth taste, and a refined flavor with a clean sweetness and a gentle aftertaste.

This sake brewery in Iwade City, Wakayama Prefecture, was founded in 1915 by the youngest son of a family that ran a silk industry. Its flagship brand is "Kurumazaka." It uses underground water from the Kino River, which originates in Odaigahara, part of Yoshino-Kumano National Park, and flows through the Yoshino River in Nara and into Wakayama, to brew its sake. In recent years, the brewery has been actively submitting its sake to tasting competitions in Japan and abroad, where it has received high praise.
