この「あかとんぼ」は、例年、当該年度の米を使った最後の仕込み（5月頃）で醸されます。その後、4か月程度の熟成されシャープな「酸味」の角が取れ、奥行きと発散する甘み、心地よい酸味を感じる味わいへと変化します。
