「仙禽クラシック」は、江戸時代の文献に基づく技法を調査して当時の酒を蘇えらせた新生クラシック。種から原点帰りした「ドメーヌさくら（栃木県さくら市）」の有機米「亀ノ尾」80%と、減農薬「山田錦」20%の割合で使用し、生酛づくりかつ天然酵母（酵母無添加）で、加水せずアルコール13度になるよう醸されています。
この弐式は、この「おりがらみ」の無濾過・生原酒です。
