"Senkin Classic" is a product that revives the sake of that time by researching techniques based on documents from the Edo period. It is made using 80% organic "Kamenoo" rice from "Domaine Sakura" (Sakura City, Tochigi Prefecture), which has been returned to its original state from the seeds, and 20% reduced-pesticide "Yamada Nishiki" rice. It is an unfiltered, unpasteurized sake (pasteurized) brewed with natural yeast (no added yeast) and without adding water, to an alcohol content of 13%.
