この「仙禽 かぶとむし」は、例年、仕込みが終盤に入る初夏の発売。2025年度より生酛での仕込みとなり、低アルコール仕様の原酒でありながら、仙禽らしい個性がしっかり残るクリア感と立体感。リンゴ酸の爽やかな酸味を際立たせるために全体の輪郭にメリハリをつけ、きらきらと美しい酸味を目指し醸されています。

柑橘系の果実やハーブ類を思わせる香り、口に含むとぎゅっとライムを絞ったような存在感のある酸味が広がり、例えるなら「大人のレモンスカッシュ」といった味わいです。

They claim to be a domaine that owns its own rice fields and is involved in everything from rice cultivation to sake brewing, and are committed to unique sake brewing, including the preservation of the ancient rice variety "Kame no O" and a commitment to organic farming.
