「モダン」シリーズのコンセプトは「江戸返り、江戸から見た未来を掲げる、あくなき日常への回帰」。栃木県さくら市産山田錦を用いた、生酛づくりの原酒。
この「モダン 旅米仕込み」は、令和の米騒動により、栃木県さくら市で収穫される原料米は大きく減少してしまったことから、全国の醸造家との繋がりによって全国から集まった米を使い醸した、特別な限定醸造酒。
今回は「産土（うぶすな）」等の醸造元である花の香酒造より譲り受けた熊本県産「穂増（ほまし）」を生酛仕込みで仕込んだ無濾過原酒（火入れ）です。

原料米に使った「穂増（ほまし）」は、江戸時代に栽培されていた古代米（こだいまい）の1種で、当時から熊本県で盛んに栽培されてきた熊本在来種であり、その品質は天下第一の米とも称され高く評価されていていた食米です。栽培の難しさからコシヒカリ等へ取って代わられ衰退していましたが、近年、復活栽培に成功しています。

They claim to be a domaine that owns its own rice fields and is involved in everything from rice cultivation to sake brewing, and are committed to unique sake brewing, including the preservation of the ancient rice variety "Kame no O" and a commitment to organic farming.
