山田錦を使用し、桜の季節に合わせて限定発売される、搾りたてのうすにごりの無濾過生原酒です。「かぶとむし」「赤とんぼ」「雪だるま」に次ぐ季節限定商品。
この「仙禽さくら」も「江戸返り」したことに伴い、生酛での仕込みへ変化、繊細な春らしい軽快な酒質を実現するためより細心の注意を払っています。

春に合わせ、生酛由来のうま味成分と複雑性はそのままに、鮮度感、はつらつとした若さ、フレッシュさが加わったうすにごり。洋梨のような香り、アルコール度数13度で複雑且つ軽い口当たり、まさに江戸時代の春の酒を思わせてくれる味わいです。
