"Sparklers" will be released when the heat of summer is over. It is a pasteurized unpasteurized sake made from a blend of "Yamada Nishiki" and "Omachi" rice grown in-house in Sakura City, Tochigi Prefecture, using the kimoto method.
By extending the drying period of the kimoto yeast starter, the lactic acid bacteria are further eliminated, improving the freshness of the kimoto, resulting in a sweet and sour juicy taste with a light and sharp flavor.
