This Junmai Ginjo is made from Yamadanishiki rice polished to 55% and brewed with Meiri Yeast (M310), a yeast with a high ethyl caproate production rate. This is a specially bottled chutori undiluted sake made from only the high-quality chutori (middle part) of the rice, which has stable quality during the mashing process, without adding water. It has a gorgeous aroma like ripe apples, the umami and sweetness of the rice, and a smooth texture.
