This neo-retro Junmai Ginjo is based on the classic Shizuoka Ginjo of the 1980s, made with Yamadanishiki rice polished to 55%, with a high sake meter value and reduced acidity, and adds a modern, light umami flavor. It has a refreshing Ginjo aroma and a crisp taste.

Producer/Brewery ( Shizuoka Prefecture/Shitaizumi Brewery )

This brewery was founded in 1883 and is located in Yaizu City, Shizuoka Prefecture.

After resuming sake brewing after the war, they quickly began working on ginjo brewing, and in 1960 they released the ginjo sake "Shirasagi," which a few years later won a gold medal at the Tokyo University of Agriculture and Technology Tasting, the most prestigious sake brewing event in Japan at the time. Since the 2009 brewing year, under the direction of Noto Toji Nishihara Mitsushi, they have been pursuing modern sake quality while continuing to use their ingenuity to brew traditional sake.
