This Junmai Daiginjo is made using premium Awa Yamada Nishiki rice, polished to 40%. The first "arabashiri" (a rough mash) and the last "seime" (pressure mash) are removed during the mashing process, leaving only the "nakagumi" (middle mash), which has a well-balanced aroma and consistent quality. This is a flavorful, unpasteurized sake.

It has a calm and elegant aroma, a smooth texture and a beautiful aftertaste.
