This special limited edition Junmai Daiginjo sake, brewed for this year's tasting competition, has been "Shizukutori" (pasteurized in a bottle) and is being released in limited quantities. Shizukutori is an extremely generous method of pressing, collecting only the sake that drips naturally without applying pressure. As a result, the taste differs greatly between the beginning and end, so the brewer, Hitoshi/Kunosuke, tastes each bottle individually, adjusting the balance to the best possible, and then carefully hand-packs it.
It has a gentle ginjo aroma and softness, but also a crisp, dry, light, and sharp taste with a sake meter value of +10. It is a versatile sake to drink with meals.
Limited quantities available: 17 x 8L bottles, 26 x 720ml bottles, and 40 x 500ml bottles.

At the National New Sake Tasting Competition, the average sake meter value of the award-winning sake was +1, with the highest being +6, meaning that overall, the sake tends to be sweet, and dry sake tends to be judged as "weak." However, this sake achieved the remarkable feat of winning an award despite having an extremely dry sake meter value of +10.
In Shizuoka Prefecture, some breweries deliberately make their sake sweeter to make it easier to win awards, as Fuuko prefers dry sake.However, winning an award with a dry sake that stuck to our company's beliefs is an achievement to be proud of.
