「59 Takachiyo」は、協会酵母1801で醸造され、扁平精米により59％まで磨かれ、米の個性を訴求したシリーズ。

この商品は、1991年に岩手県で誕生した吟醸香を強化した酒造好適米「吟ぎんが」を使用し醸された無濾過生原酒です。
梨やライチ、かすかにバナナ・メロンも感じる立ち香、上品かつしっかりとした甘みを感じ、酸とのバランスが良く優しくキレていく味わいです。

This brewery was founded in 1868 and is located in Minamiuonuma City, Niigata Prefecture.

The underground water from the Makihata mountain range, pumped up from a well dug on the premises, is of high quality and soft, making it ideal for brewing sake with a smooth mouthfeel.In addition, the brewery uses "ippon-jime" rice, a rare variety that is increasingly being used by fewer and fewer breweries due to the difficulty of polishing the rice, managing the moisture content, and making koji.The brewers themselves are involved in the entire process, from seed production to management, cultivation, and polishing, and are extremely particular about the quality of the rice.
